2019: In his first season with the Huskies, Plunkett appeared in nine games and made three starts at wide receiver. He finished fifth on the team in total receiving yards, wracking up 119 total throughout the season. Plunkett additionally scored a touchfown in St. Cloud State's loss to Minnesota-Duluth in September.

2018: Plunkett redshirted in 2018 to preserve a season of eligibility.
